Please read this article from Sprudge, about the efforts of two Counter Culture educators to get data on a living wage for baristas.
Not for you to take the referenced survey (unless you’re an industry professional), but please read in particular the interview about the challenges to baristas in a business environment where the margins are often razor-thin. Think for a second about how difficult their job is, how much you value a quality barista, and how important they are as the face of a coffee business.
