See my Denver field report
Novo is one of the region’s best regarded roasters, and their beans can be found at several quality coffee shops. They also operate four cafes in Denver, including this outlet in a newish multi-use building downtown off the 16th Street Mall and just steps away from an ink! Coffee outlet.
The space follows the secret law of industrial aesthetic for coffee shops, right down to the pull-up garage door of glass. The place manages to feel warm enough, with black and white the prevailing palette. There are occasional bursts of color, including the vivid orange Synesso MVP Hydra espresso machine. Don’t be fooled by the shocking color, this is one serious piece of machinery.
The macchiato was very robust and had layers of flavor. The finish was a touch too dry/puckering, but overall a very good cup.
